ALTITUDE: 50 meters (165 feet) above sea level
SOIL TYPE: sand and clay with a significant presence of stones
PLANTIG DENSITY: 5600 vines per hectare (2240 per acre)

HARVEST DATE: last ten days of August
HARVESTING: hand picked into slatted packing cases
YIELD PER HECTARE: 6 tons (2,4 tons per acre)

Fermentation and Aging

FERMENTATION: in stainless steel tanks
FERMENTATION TEMPERATURE: 18° centigrade (64° Fahrenheit)

SKIN CONCTAT: 12 hours of cryo-maceration before the start of fermentation

Notes

Bright straw yellow with greenish reflections. Aromas of salty minerality fading into tones of orange blossom, wisteria leaf and lemongrass. Initial fresh tasting palate with well a balanced flavor. Tastes of iodine, mineral and floral, and a contained and balanced perception of alcohol. The dominance of mineral is a testament to the wine’s longevity, which is reminiscent of certain Riesling wines, the source of its inspiration. Goes well with light fish dishes, fried calamari, and also as an aperitif at sunset. Made only in steel.
